ABOUT US

Our Story

Fire Island Oyster Company was started in 2013 based on a shared love for the sea. It is a family owned and operated farm that is run by Colby Doyon, who received his Bachelor of Science degree in Aquaculture at the University of Rhode Island, Tony Capone, Anthony Capone, and Kathryn Doyon (Capone) who has her B.A. in Biology from URI. 

The oyster farm utilizes many methods of aquaculture including a floating bag system integrated with floating cages and bottom cages. Located in the heart of the Great South Bay near the Fire Island inlet, the farm is in a prime location for aquatic flow carried by the daily incoming and outgoing tides. Because of this, the oysters are provided optimal conditions for healthy growth, thus creating tasty oysters that are perfectly briny and finished with a sweetness from the muscle. The hard shell, and easy-to-shuck hinge that these oysters boast come from the countless hours and care that go into maintaining the oysters. The resulting product speaks for itself in it's taste, look and overall "shuckability". 

 

OYSTERS

Sustainable filter feeders that help clean the bay.

This iconic bivalve improves water quality and is a keystone species in the bay. One healthy oyster can filter feed 50 gallons of seawater in ONE day! This helps with the overall effort to clean the bay. They are also a keystone species, meaning a healthy oyster population is integral for the growth and survival of other important species in the ecosystem. By improving overall water quality, and providing habitat and food for other species the oyster helps "Save The Great South Bay" here on southern Long Island.
